Soup season is among us and I couldn’t be more excited! Admittedly, I’m not a huge fan of Fall in general. Its cold and often wet and its dark way too much of the day.
But one of the things that makes Fall bearable for me is celebrating all the things that make this season special. A huge part of that includes FOOD.
Given that I live in Vegas, I’m sure you can imagine that must of the year we experience sweltering heat. Not exactly the most ideal soup weather, am I right?
So while I don’t love Fall, I do love soup so I’m going to take the wins where I can get it!
But whether you are already missing Summer or are savoring what you consider to be the best season, this soup is the perfect thing for a cozy night at home with the family. Plus its filled with so much goodness for your family to devour!
INGREDIENTS:
1 package sausage (I use the Sweet Italian Style from Trader Joe’s)
1-2 Tbs EVOO
Dollar of grass-fed butter (I use Kirkland’s)
5ish cloves garlic, minced (measure with your heart)
2-3 stalks celery, sliced
1 medium onion, diced
2 rainbow carrots, cut into half moons
2 sweet potatoes, diced
3-4 tomatoes, diced
2 containers chicken bone broth
salt + pepper, to taste
pinch of red pepper flakes
palmful of Rosemary
2 bay leafs
2 handfuls of shredded kale
DIRECTIONS:
To start, brown your sausage in a pan. While that is cooking, prepare + dice your veggies.
In a Dutch Oven or large pot, heat your oil + butter over medium/high heat. Add your garlic, celery, + onion. Season generously with salt + pepper and add a pinch of red pepper flakes.
Once the onion is translucent, add to the pot your carrots + sweet potatoes. Once those begin to soften, stir in the diced tomatoes. As you stir, smash some of the tomatoes so the juices can add flavor to the broth.
Once the sausage is cooked, slice in half and then into half moons and stir into the veggies. Season with the Rosemary and add in a Bay Leaf or two. Pour in your bone broth and stir to combine.
Once everything has come to a boil, reduce to simmer. A few minutes before you are ready to eat, taste the broth and adjust seasoning according to your preference. Stir in the handfuls of fresh kale. Lid and let simmer for 5 minutes.
Enjoy with some freshly baked Sourdough!
