Breakfast

For some reason, I love breakfast food but I hate eating breakfast. Which I know is just a huge contradiction, but it’s true! I love custom omlettes and crepes filled with crazy combinations. I enjoy biting my teeth into bacon as much as the rest of you. And sausage? Mmmm. My arteries would cry if I ate to my hearts content. And y’all already know my crazy obsession with coffee…

It is commonly known that breakfast is the most important meal of the day. So why is it the hardest to make a reality?

Mornings are not exactly relaxing around here. With a preschooler and a first grader, time is something that is always escaping from me. Every morning, I take 10-15 minutes before the kids wake up to down some coffee to help with the brain fog. When I’m coherent enough, I try to get my devotions in that timeframe too (or at least some scripture reading). It helps me keep my cool at the breakfast table. But once the kids are up…it’s go go go!

My son is not a morning person, and my daughter is such a morning person. All my morning energy is spent putting a fire under Hollywood’s butt and asking Cocoa to pleeeease calm down. Between that, making breakfast and lunch, and getting my tired self to a presentable* state before running out the door…I’m lucky if I finish that first cup of coffee.

 *And by “presentable”, I mean putting on a bra, brushing my teeth and washing off yesterday’s makeup.

That being said…our family is really focusing on healthy choices in all aspects of our life. We all have our own goals, but my personal focus is breakfast. For me, that means planning ahead and stocking my fridge with quick and healthy options. And in case any of you are struggling with the same thing, I thought I would share my struggles, as well as my solutions. Why? Because we’re in this thing together, friend!

1 / GREEK YOGURT + GRANOLA /

Top it with a drizzle of honey and some cinnamon to take it to the next level. Fresh (or frozen) berries are also great. I use THIS recipe to make the granola myself and store it in a canister.

2 / SOURDOUGH + RICOTTA + BLUEBERRIES /

I love fresh-baked sourdough. I’ve been buying it from Sprouts or Whole Foods, but I want to learn how to make it myself. My bestie told me I had to try ricotta cheese with a drizzle of honey. I added the blueberries for some freshness and sweetness. And then I saw on Pinterest to add some fresh mint. Definitely worth it!

3 / HOME-MADE GRANOLA BARS /

There are lots of great recipes if you just look for them. I’ve been tweaking mine and I think it’s almost perfect. I’ll try to post that soon.

4 / BREAKFAST TACOS /

This miracle happened thanks to leftover filling from this Enchilada recipe. Now I make the filling just for breakfast.

5 / SCRAMBLED EGGS + TOAST /

I’ve recently been converted to Sourdough…but scrambled eggs are still a go-to. In this one I added red onion, tomatoes and spinach. Oh…and of course, cheese!

6 / FRIED EGG + AVACADO + TOMATO /

On it’s on, or topping a thick slice of toasted sourdough, this has been a longtime favorite. Let some cheese melt over the egg and top with freshness.

7 / SMOOTHIES / 

Endless options. Optimal freshness. Customized to your tastebuds. My personal favorite is avocado + spinach + pear + frozen pineapple + banana + applesauce. And then I always like to add in some flax or chia seed and top it with coconut milk.
